extract files from image

We have a deploy studio PC image that I cannot get to restore.  It contains some important files that I need extracted from the image.  Is there an easy way to get files from a Deploy Studio image?

If it's an HFS image, you should be able to double click on it and mount it in OSX. Does this not work?

It is not an HFS image but a PC image.
